Hot chocolate season is back and we’re ready for an unbe-leaf-able Autumn!

Although the days may be shorter, whether you’re planning on a quieter getaway or a spooktacular stay we have plenty of reasons to love the fall season at Away Resorts…

Crisp mornings and dewy grass only mean one thing. Make sure you pack hiking boots and enjoy a scenic stroll or an exhilarating hike during your holiday.  

In the enchanting New Forest our beautiful woodland park Sandy Balls, we have a variety of trails and footpaths that weave through the trees and forest areas. If you take the time to look around and listen, you will begin to hear birds chirping and see the wild ponies grazing.  

Capture the magic of Autumn on your next beach walk at St Ives Bay and enjoy the Cornish coastline. With a coastal path leading straight to the sandy beach, be sure to layer the family up (including your pooches) and keep the winter blues at bay with a brisk walk.  

At Whitecliff Bay you have the choice of coastal or rolling hills, with a variety of different places to explore during your holiday. An ideal opportunity to relax and unwind whilst taking in the Isle of Wight picturesque shore.

Fun, family-friendly, and totally spooky! Pumpkin carving is a great fall activity, go big or ‘gourd’ home and begin with removing the gooey stuff and get carving crazy. Concentration is key, prizes are at stake…

Easy recipes to cook up after a busy day of adventure!

Cajun Chicken One Pot

Prep: 10 mins

Cook: 30 mins

Ingredients:

  • 1 tbsp olive oil
  • 400g chicken breasts, chopped into large chunks 
  • 3 garlic cloves, finely chopped or grated 
  • 2 tbsp Cajun-style seasoning 
  • 400g can chopped tomatoes or passata 
  • 1 chicken stock cube, crumbled 
  • 500g penne or another tube- shaped pasta 
  • 150ml double cream 
  • 20g parmesan, finely grated, plus extra to serve 
  • ½ lemon, juiced

Bean and Halloumi Stew

Prep: 5 mins

Cook: 20 mins

Ingredients:

  • 3 tbsp olive oil 
  • 1 onion , thinly sliced 
  • 1 red pepper , thinly sliced 
  • 2 garlic cloves , crushed 
  • 3 tbsp red chilli pesto , sundried tomato pesto or vegan alternative 
  • 1 heaped tsp ground coriander 
  • 400g can mixed beans , drained and rinsed 
  • 400g can chopped tomatoes 
  • ½ x 250g block halloumi , sliced 
  • ½ small bunch of coriander , finely chopped 
  • garlic bread , to serve (optional)

Rice Krispie pumpkins for pudding

Prep time: 20 mins

Ingredients:

  • 1/4 cup butter 
  • 1 bag large marshmallows  
  • 6 cups of Rice Krispies 
  • Red & Yellow Liquid Food Colouring 
  • Mini Rolos 
  • Green M&M’s 
  • 1/4 cup cooking oil or melted butter in a small bowl (to keep from sticking to your hands)
